Quick-pickled cabbage (slaw)

Ingredients
- 1 clove garlic, cut in half
- 2 cups cabbage, finely shredded
- 1/2 tsp Diamond Crystal kosher salt
- 1 tbsp apple cider vinegar
- Any additional vegetables, like onions, bell peppers, or carrots, thinly sliced, julienned, or shredded
Instructions
- Rub one half of the garlic along the surface of a medium bowl. Discard the garlic or reserve for another purpose.
- Add the rest of the ingredients to the bowl and mix well. Let sit for at least 20 minutes while you prepare other parts of your meal, then serve.
